The only “jump” you have to do is between Spain and Italy, since they don’t border and it’ll took several hours by train (you have to go through France) and between Italy and Greece there’s the sea; so, Portugal/Spain by train; Spain to Italy by flying is the fastest way, though train and ship are possible; from Southern Italy you could enjoy a ferry, while if you leave Italy for Greece by the Center or North, it’s better a fly. Then Greece/Turkey by train.
A cruise would be the easiest, because it would go to a lot of the Greek islands.
